So the 1st week went well!! I've really enjoyed cooking this past week. Have you tried any of them?
Italian Chicken Pocket: I didn't get a picture of this one but have tried this recipe before and love it, just remember to check the ingredients on the italian dressing as well as the tomatoes, so many use salt or sugar as preservatives!!
Lazy Baked Greek Chicken: I tried this one the week before as well, it's great by itself and is awesome over a bed of spagetti and covered with homemade spagetti sauce!! By making your own sauce you can better control the anount of salt in your dish also I got a whole wheat organic pasta, which had a great nutty flavor! It all adds up, it make take a little longer at the store but it's worth it to know exactly what's going into your body! I'm posting a picture with out the sauce.
Spagetti with Mozzarella- Stuffed Meatballs: So yummy!! The only problem I had was the meatballs falling apart as they cooked. I think if I make it again I'll be adding some more seasoning to the meatballs (oregano, basil, garlic) and trying some saltine crackers instead of breadcrumbs. Here again I used the whole wheat noodles and fresh ingredients to control every aspect of what when into my dishes!
Blueberry Cheesecake Flapjacks: Oh wow!! This was so yummy, for anymeal!! Jeff nor I were big fans of the graham cracker crumbs, but they were still very yummy! This is one that you just have to eat in moderation. You can get the fat free cream cheese and use fresh blueberries, but there's only so much you can do. If anyone has anymore healthy suggestions for this one please pass them on!!
Goo-Goo Clusters: I ended up making these for the DB Orchestra's Cornhole Tournament Bake Sale, they were a big hit!! But who doesn't love chocolate!! I had to post the picture of Iz admiring the yummy dish!! Be careful when you make these, it's hard to NOT lick the spoon and your fingers when making it! I can't make this one again unless I'm planning on giving them away! I could eat all of this in one sitting!
Vanilla Ice Cream Parfaits with Coconut Oats and Pecans: So this was my favorite, as well as Jeff's for the week! I was not happy about buying the vanilla beans, they were stinkin expensive (I found them cheapest at Food City), but it was so worth it! I will definately make this again!! The only thing that would make this better would be some fresh Scott's Strawberries!! I don't have parfait glasses so we did them sunday style! Oh I could eat sweets all day long, oh wait I already did that..... and gained over 40lbs in the process! So from here on out anyone that's interested in tasting my sweets please message me! I need to share all these so I don't eat them all myself!!
