Week #2 (4/18/2011)

Woo Hoo!! Are you ready for another week? Jeff sure is! Here we go:

Buttermilk Biscuit Waffles

2 1/4 cup Bisquick
2/3 cup milk or buttermilk
1/2 cup shredded sharp cheddar cheese
2Tbsp chives, chopped
salt & pepper
For the Milk Gravy:
3Tbsp butter
2Tbsp flour
2cups milk

In medium mixing bowl, mix Bisquick, milk, cheese, chives, and salt and pepper to taste. Spray waffle maker with non-stick cooking spray and distribute mixture evenly in waffle iron. Cook 8-10 minutes or until biscuit waffles are slightly brown.
Melt butter in skillet, add flour, turning around pan, add milk to desired consistency.
Top cooked biscuit waffles with sausage (we're going to do turkey sausage) and milk gravy! ENJOY!!

Lazy Bolognese-style Lasagna

salt and pepper
1lb wavy lasagna noodles, broken into irregular pieces
2Tbsp EVOO
1 1/2lb ground beef
1 onion finely chopped
2-3 lg cloves garlic, chopped
1 carrot, grated
1 sprig rosemary, chopped
sprinkle ground cloves
1/4 cup tomato paste
1cup white wine (I'll be using chicken stock)
2cups beef stock
3Tbsp butter
2 rounded Tbsp flour
2 cups whole milk
freshly grated nutmeg to taste
parmegano-reggiano cheese

Bring lg pot of water to boil, salt it, add pasta and cook until al dente.
Heat EVOO in large pan over med-high heat. Add beef and brown. Add onion, garlic, carrot, rosemary, cloves, salt and pepper, cook until tender, 7-8 minutes. Stir in tomato paste for 1 min, stir in wine/ chick stock and beef stock, simmer for a few more minutes.
Preheat broiler and position a rack in center of the oven. In a saucepan, melt butter over med heat. Whisk in flour, then milk and let thicken enough to coat a spoon. season with salt, pepper and nutmeg.
Toss pasta with meat sauce and arrange in a casserole dish. Pour be'cheamel sauce over the top in an even layer. Top with layer of parm-reg cheese and broil in oven till brown on top.

Chicago Style Deep Dish Pizza
(I've got an assortment of recipes for this one! It's the one thing I was dying to have during the HCG transformation!!) Here's the basic idea

For dough:
1 1/3 cup warm water
2pks rapid rise yeast
1 tsp salt
1Tbsp + 1tsp sugar
4 cups bread flour
3Tbsp olive oil

Preheat oven to 425 degrees. Combine 2/3 cup warm water, 1tsp sugar, and 2 packs yeast in small bowl. Let sit for 5 min until foamy, set aside. Combine salt, olive oil, remaining sugar, warm water and flour (add in intervals and check until consistency of dough is stiff- may not need all flour) Mix yeast and flour mixture and knead on a lightly floured surface until smooth. Place dough into a bowl that has been coated with oil, turn to coat. Cover and let rise until size doubles (about an hour).
For Sauce:
1 1/2 cups water
1/3 cup EVOO
6oz canned tomato paste (or sub your own homemade)
salt and pepper to taste
2 cloves garlic (or 1/4 tsp garlic powder)
1 1/2 tsp dried oregano
1 1/2 tsp dried basil
1 1/2tsp dried rosemary
1tsp dried marjoram (optional)

Combine 1st three ingredients thoroughly in sauce pan over med heat. Add remaining and mix well. Let simmer for about 30 minutes.

Toppings for pizza:
2cups Mozzarella cheese
cooked sausage
peppers
pepperoni
grated Parmesan

Using a deep baking dish, spread dough using your fingers at the bottom of pan and make sure you have enough dough to come up the sides of the pan approx 1/2" high.
Begin by placing a layer of mozz cheese on bottom of crust (this will keep crust from getting soggy!), add tomato sauce and all toppings.
Place in oven for 30-40 minutes until golden and crispy!!

Spicy Honey-Glazed Chicken Breasts

1/4 cup EVOO
1small onion, finely chopped
1 clove garlic, finely chopped
1/2 cup honey
2tsp hot pepper sauce
1/2tsp chili powder
1tsp lemon juice
8 skinless, boneless chicken breast (about 4lbs)
salt
1 pineapple- peeled, cored and cut into 8 thick rings

In small saucepan, heat 1Tbsp olive oil over med heat. Add onion and garlic to cook, stirring, until translucent and beginning to brown, 6-8 minutes. Add honey, hot pepper sauce and chili powder and simmer for 1 minute. Remove from heat, stir in lemon juice and set aside.
Preheat grill or large grill pan to med-high. Rub chicken with remaining 3Tbsp EVOO and season with salt. Grill until well marked, about 7 minutes. Flip and cook until bottoms are well marked and chicken is cooked through, another 2 minutes. Transfer to plate and brush with reserved honey glaze. Cover with foil and let rest for 5 minutes.
Meanwhile, grill pineapple until well marked on one side, about 4 minutes, flip and cook another 2 minutes. Serve with chicken!

Auntie Ann's Pretzels

1 1/2 cup warm water
1 1/8tsp active yeast (1 1/2 pkg)
2Tbsp brown sugar
1 1/8 tsp salt
1 cup bread flour
3 cups regular flour

2cups warm water
2Tbsp Baking Soda

To taste coarse salt
2-4Tbsp Butter (melted)

Sprinkle yeast on lukewarm water in mixing bowl; stir to dissolve. Add sugar, salt and stir to dissolve; add flour and knead dough until smooth and elastic. Let rise for at least 1/2 hour.
Prepare baking soda water bath of warm water and baking soda. Stir often.
After dough has risen, pinch off bits of dough and roll into a long rope (about 1/2" thick or less) and shape. Dip pretzel into soda wash and place on greased baking sheet. Allow pretzel to rise again. Bake 450 degrees for about 10 minutes or until golden. Brush with melted butter and salt.

Cookies 'N Cream Pudding

8 OREO cookies
1pkg (3.4oz) vanilla instant pudding
2cups cold milk
3/4 cup thawed cool whip

Break 1 cook into 4 pieces, reserve for garnish, crush remaining cookies
Beat pudding mix and milk with whisk for 2 minutes. Stir in crushed cookies and 1/2 cup cool whip
Spoon into 4 dessert dishes, top with remaining cool whip and reserved cookie pieces.
